So, I've got all the content I need to continue with playing PL. Working on my birdy, my first character, so far information I've got for success is pure dex? 5 focus, 5 blast, 5 thorn, 5 thorn, 5 blinding, and 5 evade, anything else that I should be slapping points into? Or just preference from there on out?

You can wear them both, and you are seeing those because they used the magic mirror and bought face masks using platinum. There is a seperate slot for vanity helms that allows you to wear both the vanity helm and your normal helm on top of this.

You can change your facial features using the magic mirror
And vanity helms are worn over your current helmet, so you get the stats still
