Just to be clear, you do not lose your vanity items. You'll still have them after you do the quest and obtain your ring.

Yes Sam, for example, if I have ONLY L71 helmet and L76 shield, I can still do the quest and get the 2-piece bonus ring.
When I got the L81 armor next cap, I would be able to get the 3-piece bonus ring.

Am I correct?

Yes, there are sparkles associated with equipping either of the Legendary Rings.
