Enter the email you want to use there. It'll say it's not a registered email and you'll be able to register and sign in with that email from then on out.

Hi Batik,
The game will default to having you play on a Guest account that is tied to your device. We do this because the vast majority of people just want to play and don't care about making an account.
If you want to use an account registered to an email you need to hit the X or otherwise log out and back out to the screen that has the 4 different choices of how you want to log in (email, Facebook, Google + or play as a Guest). Then choose email and you'll be on your way!
