Where can I find Ubermans and Ulfang? Been on the right maps, but they don't appear.

The maps where those quests are have respawning monsters. Every time a monster respawns it has a chance for the boss to come out (at least I think that is how it works). Anyway, the idea is that you get the quest to kill 200 of the monsters in the zone. Run around, clearing the zone and as you go you should have a pretty good chance to get a boss along the way.
