so for example, if we have spare arcane eggs, can use the event to craft the spare arcane eggs into essence... which is then used to craft different arcane pets that we might not have already instead (long as its on the crafting list)

Same with ledge,mythic and heroic eggs?

Yes! That is the design. :-)

You’ll need to do the quest to get the necromancy scroll from the boss - but after that you can craft as much essence as you wish.
