Orlok is better than every str item below it in level. Its even possible to nuke a demonic str bear if your proc+crushing hits. Your proc will lower their dodge and their def, combined with crushing blow, they're pretty much as good as dead

I may need to stress more that I'm a Mage :0. If the proc hits and I use nightmare, does it stack?

As a mage, orlok is > glyph without a question. You need skill damage way more than a stun proc.

Yes both of the dead and orlok sword have the proc.
