So I'm thinking about right now buying a fiery set and was wondering whats the sets final defense rating with it all on?

Not sure on exact defense but I recall 220-230ish defense while equipped if you're full int. Assuming you don't have a 3 piece ring.

Fiery wand set w/ eye adds 219 armor and 4 dodge
Fiery wand set w/ egg adds 225 armor and 8 dodge
Sand goddess wand set adds 238 armor and 13 dodge
