Classes in AL are more locked into their core roles unlike PL where you can make a hybrid better. In AL if you do make the sacrifice of not maxing out you're damage some survivability can be gained but the loss of damage to a sorcerer in general is not worth it. The best things you can do to increase survivability is buy security armor and brutality jewerly. You'll get the most damage, health and armor with the fewest sacrifices.
In all honesty the warrior heals in AL is so good if you want a tank that can heal well, just make a warrior.
