Kiting means running around with the target "on a string", out of reach of your ranged weapon. This will work for either a bird or an elf. Bears just need a lot of potions.
BUT...
As we all know, it's hard as heck to kite Meathead when the zombies keep respawning.
The answer: Meathead's Deli. They don't respawn in Meathead's Deli and he is in the first room, the one on the right. You will probably have to kite each zombie, and draw them off carefully, because they have some more hp in the mini-dungeon. If too many attack you, run back to the starting room in the deepest corner. Most will return to their posts.
Then draw Meathead into the empty starting room and kite him there. Stay close to the walls and as far from him as your range permits. It will take a while, but just keep kiting and you will get him. Voila! It says Ready to Turn In! (Bosses are bosses wherever they are.) I did it with a level 4 bird.
Note: Meathead is not on a "tether" like the other zombies. You can't get so far away that he will return to his room. Once he locks on you, he is locked until you die or he dies or you quit the map.
