I don't have a screenshot, but the threat indicator is visible whenever you see an enemy's health bar. It is the dot to the left of the health bar (can be gray, white, yellow, red).

Threat level is "white", just left of the enemy's health bar.

What I don't get is why chests have a threat level.
Do you get better drops/gold with varying threat levels?

In the dev's standpoint, they gave chests a health bar as well, since an attack is needed to "defeat" the chest and drop gold/loot. With the chest's health bar of 1, they probably just didn't leave out the threat level and left it in to fit with the rest of the campaign level's enemy threat level.

Another question, how do you get it to go down?

Clear the map before killing the boss. Alternatively, you can get a threat level to go down by leveling, but you need to be the boss' level in order to get the desired level loot, so that method doesn't work.
