after you get the crown is there anyway to make lets say a strength one? or can you only choose one?

You can craft any crown you would like, since there is no requirement for the crowns you could be a mage wearing a dex crown, or a warrior wearing a mage crown. However I recommend picking the crown of your class because if they come out with a set with the crown.

You first get the dingy crown, which you later craft into an enchanted (int) custom (Dex) or fortified (str)

No. The quests are only offered once

yep, unless you are super cool like ellyidol who has both str and dex crowns
