Stun him with Kelvin/George when he does his AoE windup and he won't drop boulders on you.
Be careful, because vines can steal pet aggro and instead the vines get stunned so you have to dodge boulders.
My strategy is to have one person at the top (preferably a sorc) to manage vines and keep them away from the boss, while the rest of the party focuses on a quick kill.
