About opponents health, asommers has said before that not showing the health adds more thrill to the fight, which it indeed does.
Level can be estimated. The +/- 5 levels of the host level. eg, a Level 50 host, only level 45-55 players can be in the room.
Staking has been talked about, not sure if it's pushing through though since last I checked it seemed like gambling.
Potions in the fight will only prolong fights making them more "boring", though if they do rebalance everything to add potions, it could work!

Showing level makes sense but i think not showing health is a good thing because some players would rush players with low health and that would take away from thr fun. Lastly staking money would be gambling and i dont think that would look good in a game made for all ages

I think there should be more obstacles in the arenas, so you can hide in tents and maybe ambush people?
