Try to check out this thread. So far IMO this is the best thread explaining the details about DMG and DPS.

It is my understanding that damage is the amount of damage per normal attack, and DPS (damage per second) refers to the average amount of damage dealt over the course of repeated attacks.

Example:
You deal 150 damage per attack.
Your dps is 190, meaning that over the course of 10 seconds, your character deals 1900 damage with repeated, uncharged attacks.

Incorrect, your skill damage is shown under the 'skills' tab when you select one of your skills.

The damage stat, as shown when inspecting a player, refers to the amount of damage dealt for each regular, uncharged attack

First off, the damage and DPS displayed refers to your basic attack with the weapon you got equipped. Damage is the average amount of damage your weapon does per attack.DPS gives you an idea of the average rate of damage you would be dealing to enemies on basic attack per second. For mages, staff does a little bit less damage, but attacks faster, usually having the tendency to have an overall higher DPS displayed. Guns attack slow, but do more damage per attack (like 2 x your damage - enemy armor because of new weapon mechanics), though has the tendency to having a smaller DPS displayed. For rogues, bows are like guns (they too share the 2x damage), so they have a smaller DPS displayed and daggers are like staffs, having a higher DPS displayed. For tanks, 2 handed weapons are like guns and bows (without the 2x damage that both the guns and bows have) so they have a smaller DPS displayed and the shields are like staffs and daggers so they have a higher DPS displayed. The effectiveness of skills is scaled based on your damage, but due to weapon changes, staffs (and I think daggers as well) have slightly higher skill damage compared to the higher damage alternatives. It depends on the situation that you get into as well. If theres a crowd of enemies, DPS is better. If it's against one big bad ugly enemy, then damage is better, but people have different play styles and might use damage against swarms of enemies. Try using each weapon type and see which one is best for you.

does charging a aimed shot nox bolt or regular attack give more damage than a regular attack considering all the skills dont have any upgrade?

Yes, however it will result in less dps due to the charge time.
