If I'm doing the math right, and I make no promises, it's about an hour and forty five minutes away, so midnight in the UK.

Would it be possible to cycle through various times in the day week to week for these contests? Not everybody can be available at 6pm CST.
Maybe do one @ 8/9am CST one week, 1pm CST another week, 6pm CST another week. That would probably help get a wider selection of participants/winners.
