Without jailbreaking, no. For some reason Apple prohibits apps that record the display (I don't know why), so only jailbroken apps have the capability to record.
An alternate way I've used is using the TV, only applicable if you have an iPad 2 though.
Other than that, maybe the PC version can be recorded through FRAPS?

checked cydia (the Jailbreak app store) and there is one to record but its $5 and the free version of it records for only 30 seconds

But the PC/MAC version via Google Chrome browser is easy to screen record from. No PL version yet though, only SL.

Nothing for iPod, though Telestream (makers of ScreenFlow) may come up with something since they already have for iPad. Spendy, though, at $99.

I capture videos thru chrome. Simple hotkey to start, stop, pause, and screenie. I think it's called Debut.
