I suppose Bird would go two ways.
1) Win by Luck.
-Obviously you're going to want to do the most damage you can the quickest possible way. This means you're risking the chance your opponent might dodge you completely.
But if they don't dodge, you'll kill 'em while they're still debuffing you.

2) Win by Debuffs.
-Debuff with a Root and Break, then Shatter Blast Blind Repulse.
If the debuff is successful, the opponent should be dead before Blind is even used.

For Mage, it's more of a class thing.
If you're facing a Bird, you want to either tank a bit or shield right before fight even starts.
A bird will never get within too much range of you, so you'll basically be dependent on your 12M attacks: Frostbite and Drain.
You'll also use Firestorm for a knockback to recover from damage via Heal.

When against Bears and Pallies, you will want to continually kite around and use Shield as a last resort, unless you're a Staff Mage, where your plan is to basically slam as much damage as possible in the start of the fight.

As a bear, you want to focus on getting your opponent pinned.
Pinned/stun locked opponent= you win.
Beckon, Stomp, Stun, Debuffs, Slashes, and you're good.
Unless...you get dodged..of course.
