how do we know what the armor cap is for each level, is there a thread or smthn

The most simple way is to ask others for information on game (or from your guild) or observe others stats on your current lvl .
Ask politely others on game was never a problem, you see much people will try to help you.

This year the character types section guides have vanished from the forums, or I can't see them my self.
From searching all forums to find about armor better enter on game and ask others .
