Yes, the damage stacks with the different types of jewels(3 total), crit damage is only on the 7 primary jewel and it stacks with crit damage from pet.
Also thank you to the OP for stopping me from removing more thief jewels, I'll read the description of things more often...

Sure, but as the one below you said, you can only use 3 and they have to be different
