Black, Red, Blue, Green dragon sets with Ring of Valiant Glory give:
3dex, 3str, 3int, 5dodge, 5hit, 65health, 10manna, 10damage, 20armor.

The difference between them:
Black-2 critical, 2health, 1h/s, 1m/s
Red-2 critical
Blue-1 critical, 1m/s
Green-1 critical, 1h/s

Gold dragon set with Ring of Valiant Glory gives:
65health, 10manna, 8damage, 20armor,
1critical, 1h/s, 1m/s

also can you craft different ones for a set for example str helm with dex armor?

No, makes no difference which combo you use, they all make the same ring. Yes, you can craft different class pieces together and still get the same ring.
