What is the difference between gems and their stats?

Hey all! I'm Kali, i'm a noobie. and im not sure how to ask these but...

I was wondering what the difference is between all the gems and if certain stats would be better for certain gems.

For example...

Blood Gems. would pluses such as Defense and attack be better in this gem category?

Is there a difference between all the gems by what they give you?

I guess what i'm basically asking is what is the difference between all the different types of Gems (Blood, Shadow, Moon, Beast)

and what is the best way to manipulate your stats (attack, def, dmg, health)
