Depends on your level of farming and if you are soloing or with groups.
If you are knowledgeable at playing a bear, then I would argue they are the most valuable characters for a farming team once beckon is attained. If you are not skilled, they can be the most detrimental.
Bird is very good at all levels, especially once cruel blast/blast shot are in the skill tree. However, if someone tries to be a bear and tank because they like to Get in front and kill, they can slow down your party.
For obvious reasons, bear is my choice.
Well my ideal team always has been and still is 1 bear 2birds and 2 mages. Bear beckons then stomps into wall, Bird sets up wall for nature strike and follows up with crule blast, most mobs dead. Rinse and repeat.
A good bear can make a run easy as pie or hard as... Well hard. Can't tell how many times I hate on bears who stomp scatters mobs.

Dex bear/bird is fine, preferably bear because it's damage and defensive stats unless you are good with bird
will you be soloing? I personally love my bear. It's just annoying when you have another one join the party that is a scatter bear.
you literally wish you could just disable his beckon. or maybe that's just me.
anywho, any of the 3 original classes are good for farming. Just depends how you want to play.
I'd do bird its long range attacks are great for farming and pvp ;)
Bear Bird, or Mage lvl60+ will be easy soloing, i recommend being enhaced with trash punch.
