I've seen this before, and I believe the solution is to go to the person who gives you the quest, and there is a reset option (so I've heard) and that fixes it :)

Maybe it was a higher level enemy? I think they vary, like melee to ranged to magic, or big mobs to smaller mobs, etc. Pretty sure they're not all the same level :)
