In the first build, I'm sure you think that 1 beckon and 1 stomp it is nothing at all but rather it is a good detail. Let me explain. When you facing a mage for example, the majority tries to push you to avoid being debuffed. Of course if you had Iron blood, victory is theirs. But knowing that you Hellscream and you dodge, it will immobilize them and you will use your dodge to approach and: Crushing blow, crippling slash, sms, beckon, stomp.
Important Detail : Taunt, Hellscream, crushing blow
You must try to keep your dodge at maximum and debuff your enemy. Without max hellscream and max crushing blow your chance to win are infinitely small.

The first build is quite difficult to adapt to, I used it myself a long time ago. You should take some points out of Evade/Taunt and get more beckon for this to actually be very effective against mages, I recommend atleast 3 beckon, and if you'd like, take another point out and get Vengeful Slash for more damage output.

As for the second build "So here I advise you to forget about iron blood. Why ? Because you are going to get nuked and kited since you can't dodge." Ironblood is there because of the nuke/kiting factor. 10 Dodge doesn't make much difference compared to 24 Armor if you lack a base dodge of at least 15 so I wouldn't delete Ironblood from the build setups, just yet. Ironblood is only there for the first nuke/kite sequence as well. After a mage gets pulled in by beckon, then crippling slashed+crushing blowed, the dodge factor isn't very important anymore.
