I think for that you need to email STS to change it for you. support@spacetimestudios.com

Do you mean your login email address to log into your STS game?
Log into your account, before you hit PLAY, click/tap on STS Nexus above your character's head. Click/tap on My Account. Click/tap on Modify Account. You should be able to change your email address to log in.

If you mean your actual email address w/ google, you just have to go to google.com and register a new email address. That is independent of STS, which as far as I know, has nothing to do w/ google.
