I liked that the Killah Kitty ears stuck out of whatever helmet I was wearing. This is no longer the case; if I put on the ears, the helmet disappears. Could you guys please consider changing this back?

Dislike. It's a vanity helmet. This was a bug I personally reported, and it was definitely a bug. Vanity helmets should hide the hat, not stick out of it.
If you want a cat ears that sticks out through the helmet then they might make a separate item for you like the breathing mask that can be worn with regular helmets, but the current implementation is finally working as intended. Dunno about refunds if such a thing is made, though.
