Why? Are you thinking more teams against each other? I'd say that'd be way harder, but it'd provide a good challenge.
It would just get messy...

There's some hard-coding going on with teams.
I offered a suggestion for SL PvP in my blog:

Thade said it was a great idea, but that there'd have to be a lot of changes made to have more teams.
It makes sense, though, since PvE is basically two teams also, mobs vs players. There's just never been a need for more than two teams.
But, that doesn't mean it can't be done!
