My health is one...says 25 in description but I got 82 from. So yay for more stuff.

Its not a bug. Attack also adds health so 25 of the 82 points are straight hp from the gem and the rest is a side effect of the higher attack just like your damage and dps were increased.

You must be wearing different items in second picture from the first and third picture.
In the second pic your health stats are in the 900s in first and third 700s.
This kind of confused me at first thought the gem caused your health too lower.
