I have not seen a single DEX shield on CS yet.
I am actually thinking there might not be a DEX shield, since we have not seen a one-handed DEX weapon yet.

I am also thinking the more offensive category for each class will form a set.
Lilith was the more offensive set for mages in Mount Fang, and that formed the crafted set, so I would guess the more offensive one in Humania will also form the "crafted version."
